The bimetal coil takes a set from vibration and thermal cycling, and many units read several degrees off within a year of service while looking perfectly healthy.
We calibrate bimetal thermometers by comparison under our accredited capability (-196 to 420 °C) with as-found and as-left data — and recalibratable units get adjusted back to true. Consider pairing them with the digital thermometers used for spot checks and the loggers watching the same equipment.
